Bikini Recipe

Serves 10 servings

Ingredients for the Clementine Cordial (produces 750ml)

300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar

For the Cocktail (yields 850ml, to serve 10)

400ml decent vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (from the recipe above)
Whole cranberries, as a garnish
Mandarin essential oil, for finishing

Instructions

To prepare the Citrus Syrup: Place the listed components into a saucepan, bring to a simmer, agitating so the sugar melts. After that, take off the burner and leave to cool down completely. Pour to a clean bottle, close it and store in the fridge, where it will keep for about a month.

To make Premix: Combine the specified spirits and syrup into one large bottle, allow it to infuse for one hour, then filter it best through a fine cloth, making it fully clarified.

To serve: Pour 85ml of your batch mix to a stirring glass containing ice, and stir carefully for a minute until cold. Pour to a chilled martini glass or similar, top with some cranberries adding the final touch by giving it a quick spritz of the essential oil over the drink.
